The soup can also be made creamy by removing 1/2-1c. of the vegetables. Blend/mash andcreturn to soup.

Quick tip! Whenever you have leftover veggies , or just ends of veggies, (cooked) bones,ginger,ext, put it into a freezer bag! And keep adding untill it’s full, then use for soup!

Looking delicious! I make my veg & bean soup creamy (using the same ingredients), by adding 2 blended cans of cannellini beans to the broth, stir and simmer for the last 5mins of cooking time 🥰🥰
