Yup, I think every Mexican kid/adult knows about this dish. So good! I also boil the eggs and cut them up into small pieces, mix it with the rice, and add some spicy salsita. 🥰

I make this whenever I have leftover spanish rice! I have it with a side of corn tortillas and the corn tortillas have to be pretty burnt 😁
