Easy Pizza Pockets You can prepare these the night before and eat cold or alternatively heat them on a sandwich toaster, a hot frying pan or microwave for a few seconds. Dough; 220g Greek yogurt 270g Self Raising flour or plain flour with 0.5 tsp baking powder Pinch of salt Filling: 150 - 200g cheese Pizza sauce (I just mix 3 -4 tbs tomato purée with 1 or 2 tbs hot water, 1 crushed garlic and salt and pepper) Fresh basil Makes 4 The easy yogurt dough is made the same way as the wraps on the 1st post at the top of my page. Mix the salt into the yogurt and add the flour and baking powder, mix well with spoon and knead for about a minute with flour as it may be sticky, cover with kitchen towel for 15 min while you get the other ingredients ready. Cut your dough into 4 and roughly shape into little rectangles, heat your frying pan to very high (drop some water in it to test the heat they should turn into beads and roll to the side) Roll out your dough into a thin rectangle about 20-25cm long (the thinner the crispier) fill half with pizza sauce basil and grated cheese and fold over as shown in the reel, press the edges down to seal and place in the pan, press it down as soon as it goes in, leave for about 30 seconds and flip, press down again once on the other side, repeat each side for about another 30 seconds until it cooked and crispy.
