Apple pie blondies 🍎 apples, warm spices and cinnamon cream cheese frosting… the perfect cozy sweet treat 🍂 Ingredients (blondies): -220g light brown sugar -130g salted butter (melted) -1x egg (room temperature) -2 tsp vanilla extract -200g plain flour -1 tsp baking powder -1/2 tsp baking soda -2-3 tsp cinnamon -1/2 tsp nutmeg -1x medium to large apple (peeled and cubed) Ingredients (frosting): -125g cream cheese (room temperature) -50g butter (softened/room temperature) -1 tsp vanilla extract -1/2 tsp cinnamon -125g icing sugar (sifted) Method (blondies): -Preheat oven to 170C. -Whisk light brown sugar and butter until combined. -Whisk in egg and vanilla extract. -Fold in flour, baking powder, baking soda, cinnamon, and nutmeg. -Fold in cubed apples. -Place mixture into a lined loaf tin. -Bake at 170C for 30-35 minutes or until it passes the toothpick test. -Once cooled completely, top with frosting. Method (frosting): -Whisk cream cheese, butter and vanilla until light and smooth. -Gradually sift in powdered sugar and cinnamon. I did about 1/4 at a time (whisking in between). -Store in the fridge until ready to spread on the blondies. Happy Baking! ❤️ #applepie #applecake #appleblondies #creamcheesefrosting
