EASY WEEKNIGHT MEAL ALERT! beefy and cheesy enchiladas ✨🙌🏻. How i make them⬇️.     Beefy and Cheesy Enchiladas  Ingredients: 1 lb ground beef 1 yellow onion, diced 4 oz can green chiles 2 and 1/2 cup shredded Mexican cheese 1 can(10oz) red enchilada sauce 1/2 cup sour cream  1/2 tsp salt 1/2 tsp chili powder 1/2 tsp cumin 1/2 tsp garlic powder 1/4 tsp pepper 1/4 tsp paprika  10-12 corn tortillas  In a skillet, add your ground beef, diced yellow onions, and seasonings. Cook 8-10 minutes until the ground beef is no longer pink and the onions are soft. Remove the skillet from heat and add the green chiles, about 1 and 1/2 cups of the shredded Mexican cheese(reserve the rest of the cheese for topping), and the sour cream.  Mix together until combined and the cheese is melted. For the corn tortillas, they will need to be heated before filling them, or else they will crack and break! You can quickly fry each corn tortilla in oil, or (what I do) heat a stack of them at a time in the microwave for about 30 seconds.   Fill the warm corn tortillas with the beef filling and roll them up. In a casserole dish, pour the red enchilada sauce into the bottom of it, until the bottom is just lightly covered in the sauce Place the filled corn tortillas in the casserole dish and top them with the rest of the red enchilada sauce and the rest of the cheese Bake at 350 for 20 minutes Optional* top your enchiladas with whatever toppings you like, some of my favorite are diced tomatoes, cilantro, green chile , sour cream, or hot sauce! #recipes #dinner #weeknightmeals #enchiladas
