@amiejessiemac: French vanilla ice cream 200ml whole milk 2 tsp vanilla paste or extract (with seeds) 2/3 cup caster sugar 2 egg yolks 1 whole egg 300ml cream 240ml condensed milk 1/4 tsp salt Warm the milk and vanilla on the stove just until you see steam come off the surface of the milk. Do not boil. Remove from the heat and in a bowl whisk together eggs and sugar. Whisk until eggs are slightly lighter in colour. Now pour a little of the warmed milk into the egg mixture and whisk to incorporate. Continue to drizzle in the milk while whisking. Transfer the egg and milk mixture back into the saucepan and onto the stove over a low medium heat. Heat this mixture until it coats the back of a wooden spoon or spatula. Remove from the heat and leave to cool (you can also place it in the fridge to cool faster). In a large bowl whisk the cream until nearly soft peaks and then add the condensed milk and salt. Now that your egg and milk mixture is cooled you can add this to the cream and whisk to incorporate. Pour this into a container larger than a 1000ml volume and place plastic wrap over the surface.
