Cod Fish Curry: this turned out unbelievably tasty.. Ingredients: - 3 tbsp Vegetable Oil - 1 tsp Mustard Seeds - 2-3 Bay Leaves - 1 Red Onion - Garlic and Ginger Block (or 1 tsp each fresh alternative) - 1 large Tomato or 2 small Tomatoes - 1 tbsp Tomato Purée - 1 tsp Salt - 3/4 tsp Turmeric - 3/4 tsp Coriander Powder - 1 tsp Paprika - 1 heaped tsp Curry Powder - 1/2 - 1 tsp Chilli Flakes - Water as required - Handful Fresh Coriander - 250ml Single Cream - 2 Cod Loins (gives you thicker pieces) - Red Chilli - Lime Wedge Method: 1. Heat the oil in a pan, then add the mustard seeds and bayleaves. Cook for a minute. Then slice the red onion and add to the pan, followed by salt and the garlic and ginger. Cook until onions soften (put the lid with low heat for 20 minutes ish). 2. Cut the tomato(s) into six segments and add to the pan. Cook and stir for a minute on high heat. Then put the lid on, drop the heat to low and let simmer for 10 minutes. 3. In the meantime, chop up some coriander and set aside. Then wash and prep your cod loins, cutting them into big chunks. 4. Once the tomatoes have softened, remove the lid and break them down as much as possible. Add in the tomato purée with a splash of water. Cook and stir for 2 minutes. 5. Add in the spices with a splash of water, then stir and cook for 2 minutes. Add in one mug of water, bring up to heat and then add in the coriander. Stir, then put the lid on and simmer on medium heat for 10 minutes. 6. Once done, add in the cream, bring up to heat and let simmer for 5-6 minutes. 7. Add in the cod pieces (do not stir). Move the pan around so the sauce covers the cod pieces. Put the lid on and simmer on medium heat for 10 minutes. 8. Remove the lid, increase the heat and reduce the sauce until it thickens and you’ve achieved your desired consistency. Add a little more coriander and then some slices of red chilli.  9. Again, just move the pan around and do not stir, or the fish will fall apart.
