Sri Lankan Patties Recipe Sri Lankan patties are a very famous and much-loved savoury snack in Sri Lanka. They have a crispy, golden pastry shell and can be filled with fish, tuna, chicken, or simply potatoes. In Sri Lanka, patties moulds are commonly available in most shops and make it easy to shape and seal the patties. If you don’t have a mould, you can use a round cutter to cut the dough into circles. Add your favourite filling, fold the dough over, and press the edges with a fork to seal. For perfectly crispy patties, the dough should be very stiff and firm, and the oil temperature is also very important. Ingredients For the Dough 2 cups plain flour ⅛ teaspoon turmeric powder 1 teaspoon salt ½ teaspoon sugar 2 tablespoons oil Water as needed Filling Use any filling you like. Fish, tuna, chicken, or potato all work well. Method Add the flour, turmeric powder, salt, sugar and oil to a bowl and mix well. Take a small, lemon-sized portion of dough and roll it out thinly with a rolling pin. Place the rolled dough on a Sri Lankan patties mould. If you don’t have a patties mould, use a round cutter to cut the rolled dough into circles. Add the filling to the centre, fold the dough over and press the edges firmly with a fork to seal. Heat the oil well. When you place the patties into the oil, it should immediately bubble around the patties. The oil should be hot enough to create bubbles, but not so hot that the patties burn before the dough cooks properly. Fry until golden and crispy, then remove and drain well.
