Recipe below and some exciting news!✨🥰 When I tell you that this is the dreamiest and most beautiful and special place, I’ve ever been to, I truly truly mean it. @chateaustvictor is an absolutely stunning chateau that we were so graciously gifted a stay by Alison and Costos, who are the most wonderful hosts. And their love and care for the chateau is so evident with how they have kept the chateau in its restored glory. The kitchen alone is something out of my dreams! So I knew exactly what I wanted to bake, something seasonal and using the best of Provençal ingredients!  The chateau was originally built in the 16th century to an Italian banker and gifted by the king of France, so it retains that classic Italian villa flare but with the beauty and subtley of Provençal charm. The walls and rafters still retain the original hand painted murals, it’s truly a breathtaking place with such a rich history and the most welcoming hosts that make you feel right at home.  They currently have 2 spots left for their Taste of Provence workshop for later this month. This workshop is for 3 nights at the chateau where they will show you exactly what life is like in a beautiful French chateau, visiting food markets, antique markets, exploring the local area, touring vineyards and giving a cookery class in the chateau's kitchen. You can contact them for more info and to reserve your spot!  Also, after spending time at the chateau, baking in their kitchen, and exploring the area, we are thinking about maybe doing a workshop as well! This would be a similar workshop where I would teach how to bake & cook some of the French seasonal classics as well as taking trips to local food and antique markets and visiting a vineyard! This would take place in May 2026, so comment below if this is something you’d be interested in! (Sorry, my caption is too long to include the recipe😅) Dream Provençal Fig Cake  Ingredients * 100 g almond flour * 75 g flour (or gluten-free blend) * 1.2 grams baking soda  * 1 gram salt  * 2 eggs * 150 grams honey * 80 grams extra-virgin olive oil * 80 grams yogurt (really any yogurt will do as long as it’s full fat) * Zest from about 1/2 of an orange * About 4-5 figs for cake and then another 3-4 figs for decor * 2 tbsp sliced almonds * Extra honey for drizzle * Fresh edible flowers or lavender sprigs Method      * Whisk eggs & honey until pale and fluffy      * Add olive oil, yogurt, and orange zest      * Fold in dry ingredients gently.     * Arrange halved figs onto the bottom of a parchment-lined tin 8 inch/20cm with spray.     * Pour batter on top then sprinkle with sliced almonds.     * Bake in a preheated oven at 175°C/350°F for about 30–35 min, until golden and set, or toothpick interred comes out clean.     * Let cool slightly then turn over onto plate.
