![Creamy Cajun Shrimp and Rice 1-2 lbs of jumbo shrimp Season the shrimp to taste with Cajun seasoning, garlic powder, pepper and oregano. Add 1 Tbsp salted butter to a pan on medium high heat. Cook the shrimp for about 1-2 minutes on each side. Remove the shrimp from the pan and add a little lemon juice and another tablespoon of butter. Saute 1/4th of a yellow onion and 3-4 cloves of minced garlic in the butter and lemon juice. Once the garlic is fragrant, add in half a cup of chicken broth. Add 1-2 Tbsp of tomato paste. Stir well and season to taste with Cajun seasoning, pepper, oregano and smoked paprika. Add 2 cups of heavy cream. Stir well then add some fresh thyme [optional] and some fresh Parmesan cheese. Allow it to simmer until it’s as thick as you prefer then toss your shrimp back in until they’re coated well. Serve with the rice of your choice, I used a low carb rice blend. Top with crushed red pepper and parsley.
