i’ve been thinking about this dish for a long time. been watching bourdain lately. this is the type of dish you wait until the night feels right, the house is loud enough, the wine is open, and you’re willing to stand at the stove longer than you planned coq au vin isn’t complicated. it just asks for your attention. dry the chicken. wait for the color. don’t rush the browning even when the oil is popping in your face. let the wine cook down. let the sauce look wrong before it looks right. french cooking gets a reputation for being precious, but most of it is just patience and restraint and knowing when to leave something alone this was my first time making it. it took four hours lmao. i made a mess. i burned myself a little. i drank the wine i cooked with. somewhere in the middle of it all, the kitchen smelled like something worth sticking around for there’s a moment with dishes like this where you understand why people keep making them, generation after generation. not because they’re flashy, or easy, or fast. but because they reward you for showing up and staying i’d make it again. worth it #homecooking #coqauvin #frenchcooking #wintervibes #ilovelife
