@bingjieee: I’ve used these stainless steel pans 3 times before this, I was able to cook eggs and even potstickers from frozen, but this time I wasn’t so lucky. Still trying to understand stainless steel. the second water test failed, it literally has to be a bead and it’ll dance around the pan, no sizzling at all

you gotta preheat it at the temp you're cooking at.. don't heat it on high if you're cooking on medium. heat it on medium until the water beads.

Heat it low and slow. Heat it on medium heat for a few minutes. The beads of water will dance. Then add your oil and cook. It takes practice, don’t give up! You got this!

When you want to cook things on a lower heat on ur stainless steel you dont have to do the water test, that is for cooking in high temps, instead let your pan heat up til its the temp you wanna cook

Heat on low, add oil after it comes to temp, add your food, and then adjust the temperature of your pans to whatever you want to cook at. Starting too high will burn your food and it takes more

You needed to get the pan a bit hotter. It should *only* bead, not bead and steam. Also use a higher smoke point oil so you don’t have to let anything cool

Let the oil heat up more also, the oil was still cold when you put the pancake in. Oil should coat the whole pan too

heat on medium high until water beads all over the pan (including edges) then turn down for about ten min to cool so it doesn't burn. add just before the food
