Chef here, I use only sourdough at work. When this happens I custom cut a piece of end bit and stuff it in the hole, toast it in the sandwich press, nobody knows.

You know what I just did a sour dough ( my first successful) I did the stretch and fold 1 let set for 20 minutes did second and added my salt and slammed it around for 2 minutes then let set for 1/2

It’s still edible so it’s a win! But a little under proofed. I would increase my bulk fermentation maybe an hour or two or if your starters young, it could just need to strengthen up a bit more 🤍
