Prep the Ingredients: -Delicately mould the beef into 100g spheres and set aside on a prep tray. -Slice a white onion into 1cm thick rings and set aside 1 ring per burger. -In a bowl, combine mayonnaise, mustard, cayenne pepper, pickle juice, sugar, salt, and pepper. -Blend or mash the pickle and garlic into a paste, then mix it into the sauce. -Taste and adjust the sauce to your preference. -Slice the potato bun and a pickle, and set aside. 2. Cook the Onions & Buns: -Oil a cast iron plate or pan and set to high heat. -Oil and salt the onion, fry until charred, then flip to char the other side. -Fry the insides of both halves of the potato bun until brown, then lightly sear the other side. 3.Cook the Beef Patties: -Add more oil to the plate/pan and generously salt and pepper the beef spheres. -Place the beef spheres on the plate/pan and oil the bottom of a spatula, pressing until each patty is about 1cm thick. (Trip your fire alarm 🔥) -Once you see juices bubbling on the patty’s surface and a dark crust underneath, flip the patties and immediately apply cheese to each. -Add a splash of water to the pan and cover to steam the cheese. 4. Assemble: -Once the cheese has melted and the other side of the patty has developed a deep crust, add an onion slice and stack the patties. -Place the top of the potato bun on top and steam for 30 seconds. -Remove from heat, plate the bottom bun with sauce and pickles, and assemble the burger.
