Alcohol will evaporate at like 78 degrees, water at 100, so yes it does evaporate before water. Unless it is 95% ethanol 5% water then both evaporate at the same time

This is all well and good, but a serving of penne alla vodka only has like half an ounce of vodka in it, so it’s not anything to worry about unless you can’t drink for religious reasons

However, the ABV is A typical recipe for Vodka sauce uses about 2 oz of vodka and 6 oz heavy cream. That's 0.8 oz pure ethanol. if 35% remains in the final sauce we're at 3.5% abv.

I bought 95% pure grain alcohol during COVID cuz rubbing alcohol was unavailable. Now trying to use it up by cleaning stuff, & I have to be quick cuz it all evaporates away in a minute or so.
