The full recipe is below or tap the link in my bio to access our website.  Don’t forget to save this post for later! 📱 💥 You can also access all these recipes on the FoodByMaria App which is available for both Apple and Android. 📱 💥 In Episode 4 of All Things Greek, I showed you how to make my Thea’s secret ingredient Greek Lemon Potatoes, well I am back to show you how to elevate this dish on a bed of Whipped Greek Yoghurt.   Here everything you need to make these Delicious Greek Lemon Potatoes and Whipped Feta & Yogurt!  INGREDIENTS — Lemon garlic sauce:
 juice of 1 lemon 1/4 cup olive oil 1 tbsp yellow mustard 1 tbsp dried oregano 3 garlic cloves, pressed 1 1/2 tsp salt 1/2 tsp pepper  	1.5 lbs baby potatoes, halved
 For the whipped yogurt:
 ¾ cup feta ¾ cup full fat Greek yogurt  Zest of one lemon 1 tbsp olive oil 1 tsp salt 	1x pint baby tomatoes
 Garnishes:
 2 tbsp finely chopped parsley 1 tsp dried oregano lemon juice Pinches salt and pepper
 INSTRUCTIONS: 1. Preheat the oven to 375F.
 2. Make the lemon garlic sauce: Whisk together lemon juice, olive oil, mustard, dried oregano, pressed garlic cloves and salt and pepper. Set aside.
 3. Make the yogurt sauce: to a blender or food processor add the yogurt, feta, lemon zest olive oil and salt. Blend until combined and mostly smooth. Set aside in the fridge.
 4. To a large sheet pan add halved baby potatoes. Drizzle with half of the lemon garlic sauce, toss and then roast cut-side down for 20-25 minutes until starting to turn golden brown.
 5. Once the potatoes have roasted, add the tomatoes to the sheet pan and gently toss. 
 6. Place back in the oven for 8-12 minutes or until the tomatoes are just starting to burst.
 7. To serve: layer the yogurt-feta sauce on the bottom of a plate and top with the roasted potatoes and tomatoes. Drizzle the rest of the lemon garlic sauce over top of the roasted potatoes and tomatoes. Top with finely chopped parsley, dried oregano, squeeze of lemon juice and extra pinch of salt and pepper.

Don’t forget to save this post for later! 📱 💥 You can also access all these recipes on the FoodByMaria App which is available for both Apple and Android. 📱 💥 I saw Ahmad from the @The Golden Balance post this recipe 5 weeks ago and I knew I needed to try it.  He talked about the importance of granting or processing your onions in the recipe and it immediately made me think of my family's Ketfedes (Greek Meatballs), so that’s how we landed on stuffing pita with Greek flavors.  I used ingredients like onion — duh, garlic, chilli flakes and mint.  Finishing it off with lemon and Tzatziki was a big flex move; honestly, these came out perfectly. I can’t wait to try Ahmad’s recipe next!  Here is everything you need to make this stunning Greek Inspired Arayes Recipe (Middle Eastern Meat Stuffed Pita).  Ingredients —    3 pitas (5-6 inches in diameter), halved
 For the beef filling —  1 lb lean ground beef 1 small-medium yellow onion, grated 2 garlic cloves, grated or pressed
1 tbsp garlic powder
1 tbsp onion powder
2 tsp salt
1/2 tsp pepper
6 tbsp fresh minced mint
1/4 tsp chili flakes
 For serving —  lemon wedges
1-2 tbsp fresh minced parsley
1/2-1 cup tzatziki (use our easy greek tzatziki recipe)
 Instructions —  1. Make the meat filling: combine the beef, grated onion, grated garlic, garlic powder, onion powder, salt, pepper, fresh mint and chili flakes in a bowl and mix well with your hands or a spatula to combine.
 2. Divide the meat filling into 6 portions. Shape each portion into a semi-circle that's just a bit smaller than half of a pita. Carefully open each pita half and put a flattened portion of meat into each. Close the pita and gently press to make the pita flat, the meat filling should be a half-inch thick.
 3. *Note: depending on the size of pita you use, you may have more or less portions. Simply use up the beef filling between as many pita halves as needed.
 4. Cook the pitas: Place a pan on medium heat and add a drizzle of olive oil. When the pan is hot add 2 pita halves and cook for 4-5 minutes per side until golden and crispy, pressing down slightly on each side as the pita halves cook. Repeat until all pita halves have been cooked, adding more olive oil to the pan as needed.
 5. Serve pita halves with lemon wedges for squeezing lemon juice over top, a pinch of fresh minced parsley and tzatziki sauce for dipping.

Welcome back to episode 24 of All Things Greek! Today we are making a delicious Greek Pasta Salad with Lemon Garlic Shrimp. This salad is the perfect side dish for your next BBQ, long weekend party or potluck. It has an added boost of protein from the lemon garlic shrimp and is Greek-inspired with feta, cucumbers, tomatoes, olives and our families famous Greek Dressing.  Let me break it down! 9 ingredients. 15 minutes or prep.  10 minutes of cook time! That’s it.  It’s just too easy! Here’s what you need! Ingredients:   1 cup dried orzo pasta 1 lb cooked, peeled frozen shrimp (defrosted) 1/2 cup chopped artichoke hearts 1 cup halved baby tomatoes 1 cup chopped cucumber (about 2 mini cucumbers or 1/2 large) 1/3 cup kalamata olives, chopped 3/4 cup crumbled feta cheese 1 yellow pepper, chopped in 1/2 inch pieces 1/3 cup chopped pistachios Greek dressing: 1/2 cup olive oil 1/2 tbsp dried oregano 1/2 tsp salt 1/4 tsp pepper juice of one lemon 1/2 tbsp red wine vinegar 2 small garlic cloves, pressed Instructions: 1. Cook the pasta according to package directions, making sure to cook to al dente since the pasta will continue to soften once it’s mixed with the dressing. Once the pasta is cooked, drain and rinse in cold water. Set aside. 2. To a small bowl or in a jar, add the dressing ingredients and whisk together or shake it. Set aside. 3. Add defrosted, cooked shrimp to a bowl and add 2 tbsp of the dressing. Stir and set aside. Turn a medium-sized frying pan to medium heat. Once warm, add shrimp and cook 1 minute per side. Remove the shrimp and set aside. 4. In a large mixing bowl toss gently together all of the salad ingredients and cooled pasta with the dressing. Add the shrimp and gently toss. Serve immediately or store in the fridge for up to 3 days until enjoying. Notes: If you don't love shrimp you can simply omit it and the salad will still be extremely delicious!
