My favorite Chinese Japanese fusion dish combines mapo tofu with shoyu ramen, to make the decadent Mapo Ramen!  It's quite heavy, but absolutely delicious.  I hope you like spicy food! [Mapo Tofu Ingredients] 1 block extra soft tofu 1L water/10g salt 10g ginger/1 clove garlic 1 negi (can replace with scallions or green onions) 150g ground beef & pork mix 1.5 tbsp sake 1.75 tbsp soy sauce 1.5 tbsp tianmian sauce .75 tbsp doubanjiang sauce .75 tbsp mala sauce 75ml water 15ml water/15g potato starch 1.  Cut up & boil a block of soft tofu in salt water, then simmer in low heat for 5 minutes. 2.  Coat a pan in sesame oil, heat it up. 3.  Turn heat off then put in chopped ginger & chopped garlic. 4.  Sautee in low heat until golden, then put in chopped negi and continue sauteeing. 5.  Add ground beef & pork, heat until all sides have sear marks. 6.  Add sake and soy sauce, stir until it boils. 7.  Add tianmian sauce, doubanjiang sauce, mala sauce,chicken, water.  Stir it up and heat until light boil. 8.  Turn off heat, mix and add water & potato starch mix, stir it up. 9.  Add additional water if too gooey for you. 11.  Turn heat off, add the tofu. 12.  Cook in low heat as you entangle the sauce & tofu. [Dashi Broth Ingredients] 1L chicken stock 20g dashi kombu Handful of bonito flakes 1.  Heat chicken stock with dashi kombu just until before boiling, then lower heat & simmer for 10 minutes. 2.  Take out kombu, heat until just boiling again then turn heat off.  Put in handful of bonito flakes, leave it for 5 minutes, then filter it out. [Mapo Ramen Ingredients (1 serving)] 1 tbsp sake 1 tbsp mirin 2 tbsp soy sauce Desired amount of lard 400 - 500ml dashi broth above 1 packet ramen noodles Sliced negi (green part) 1.  Burn off alcohol from sake & mirin, put into bowl. 2.  Add soy sauce, lard, and dashi broth.  Mix it up. 3.  Cook 1 packed of ramen noodles, put into bowl. 4.
