 1 (15oz) can garbanzo beans (aka chickpeas), drained
 3 tbsp extra virgin olive oil 1 tsp sea salt 1/2 tsp ground black pepper
 1 tsp smoked paprika 8oz hummus (homemade or store bought) 
 1 large bunch curly parsley, finely chopped
 1/2 cucumber, diced small
 1 roma tomato, finely diced

 2 tbsp extra virgin olive oil 1 tbsp vinegar of choice (I’m using apple cider vinegar)
 1 tbsp agave syrup or maple syrup
 1/4 tsp sea salt Garnish Dried Cranberries Hemp Seeds 1. Preheat the oven to 350F. In a large bowl, add the chickpeas, cauliflower, olive oil, salt, pepper, and paprika and toss to combine. Spread onto a baking sheet lined with parchment paper and bake until crispy, about 30 minutes. 2. Add the chopped parsley, cucumber, tomato, and red onion to the same bowl you used for your chickpeas (this will add a little extra seasoning to your veggies). 3. Make your dressing: whisk together the olive oil, vinegar, agave, and salt in a small bowl or jar. drizzle over your salad and toss to combine. 4. To serve, spread the hummus in the bottom of a bowl, top with the salad and roasted chickpeas and cauliflower.
