THIS is the kind of dinner I’ll choose over takeout every single time Ground beef & potatoes, creamy refried beans, Mexican rice, and fresh homemade flour tortillas straight off the skillet For the beans: Ingredients: – 1 1/2 cups pinto beans (rinsed) – 1 white onion (half of it diced) – 3 garlic cloves (peeled) – 2 bay leaves – 6 cups water – 3 tsp chicken bouillon – 12 oz bacon Instructions: Add the pinto beans, the onion half, garlic, bay leaves, and water to a pot. Bring to a boil, then reduce heat to low, cover, and cook for 1 hour. Stir in the chicken bouillon. Cover again and continue cooking for about 1 more hour or until the beans are very tender. Set aside. In a skillet, fry the bacon until crispy. Transfer it to a paper towel–lined plate. Leave about 2 tablespoons of bacon grease in the skillet. Add the diced onion to the skillet, season with salt, and cook for about 10 minutes, stirring every few minutes. Transfer the cooked beans to the skillet with the onion and add about 1 1/2 cups of the bean broth. Mash the beans until they reach your desired consistency. Let them simmer for a few minutes, then crumble the bacon and stir it into the beans. Serve warm and enjoy! Mexican Rice Ingredients – 2 cups jasmine rice – 3 garlic cloves (peeled) – ¼ white onion – 5 roma tomatoes (roughly chopped) – 2 tsp chicken bouillon – 2 tsp tomato bouillon – 1½ cups water (divided) – 2 tbs vegetable oil Instructions 1️⃣ Add the garlic cloves, onion, tomatoes, chicken bouillon, tomato bouillon, and ½ cup of the water to a blender. Blend until smooth and set aside. 2️⃣ Heat a skillet over medium heat and add the oil. 3️⃣ Once hot, add the rice and toast it for 5–7 minutes, stirring frequently, until golden. 4️⃣ Pour in the blended tomato sauce and stir. Let cook for 2 minutes. 5️⃣ Add the remaining 1 cup of water, bring to a boil, then reduce heat to low. 6️⃣ Cover and cook for 20 minutes. 7️⃣ Fluff with a fork and serve. Picadillo recipe: - 4 Roma tomatoes - 1 jalapeño - 1/4 white onion - 3 garlic cloves - 1 tsp Mexican oregano - 2 tsp chicken bouillon - 1 tsp ground cumin - 2 cups of water - 1 lb ground beef - 3 gold potatoes (peeled and chopped) - 1 tsp garlic powder - salt and pepper - 2 bay leaves - chopped cilantro Instructions: In a blender add the tomatoes, jalapeño, onion, garlic, oregano, chicken bouillon, cumin and water. Blend until smooth. In a pot over medium heat brown and crumble the ground beef. Season with the garlic powder, salt and pepper. Once cooked through add the potatoes, bay leaves and the blended salsa. Stir and bring to a simmer then cover and cook over medium heat for 15 minutes or until the potatoes are cooked through. Then stir in the cilantro. For a less brothy picadillo add less water. ✨ Homemade Flour Tortillas ✨ Ingredients: - 4 cups all-purpose flour - 1 tsp salt - 8 tbsp butter (I used salted) - 1 ½ cups water Instructions: In a microwave safe dish, heat the butter and water together until the butter is completely melted and the water is hot. In the bowl of a stand mixer, combine the flour and salt. With the mixer running on medium speed, slowly pour in the hot water and butter mixture. Mix for about 8 minutes until a smooth dough forms. If the dough is very sticky, add a little flour (1 tablespoon at a time). It’s okay if the dough is slightly sticky it just needs to pull away from the sides of the bowl. Cover the dough and let it rest for 30 minutes. Divide the dough into 12 equal balls. Roll each one out into a large thin circle. Dust with flour if needed. Heat a large skillet over medium heat. Cook each tortilla for about 1 minute per side, until bubbles form and they develop golden spots. Wrap the cooked tortillas in a clean kitchen towel to keep them warm and soft. These tortillas stay soft and pliable, making them perfect for burritos, tacos, quesadillas, you name it. #mexicanfood #mexicanrecipe #recetasmexicanas
