food prep with me! 🌱  BAGELS • 1 1/2 cups warm water • 1 sachet of fast action yeast • 1 tbsp soft brown sugar • 4 cups of string white bread flour  • 2 tsp salt Mix water, sugar and yeast in a latge bowl and leave for 5 minutes. Add flour and salt and mix until you get a shaggy dough. Knead for 5-10 minutes until the dough is smooth. Proof in an oiled bowl for 1-2 hours until the doigh has foubled in size. Punchc out the air, tip doigh onto worksurface and split into 8 equal balls. Pinch a hole in the middle of each ball to create the bagel shape. Cover with a tea towel and proof for a further 30 minutes. Boil each bagel for 1-2 minutes in water with 2 tbsp brown sugar dissolved, Top with poppy seeds or sesame seeds. Brush on a mixture of oat milk, sunflower oil and maple syrup as an “egg wash”. Bake for 20/25 minutes. POTATO LEEK SOUP • 3 large leeks • 2 large potatos  • 5 cloves of garlic  • 3 vegetable stock cubes • juice of 1/2 a lemon • 1 tsp ras el hanout • 1/4 cup nutritional yeast • 1 tsp ground black pepper Sauté the leeks for about 10 minutes until they have softened, add the peeled and chopped potatoes with 2 cloves of the garlic. Add the stock cubes and enough water to completely cover the veggies. Simmer for 20 minutes. Allow to cool slightly and blend with 3 more raw garlic cloves, the lemon juice, ras el hanout, black pepper and nutritional yeast until smooth.
