I’ve learned not to use plastic for fermentation its not healthy. Also if you close it like that the gas cannot get out during the active fermentation part and it will explode?

Yummy. What though is daikin and Gochugara? Can I leave out fish sauce as I’m not allowed anythinf in a bottle or tin but I have one soy from uk which is allergy free so I can use that.
