Creamy Mushroom Soup 👨🏼‍🍳🍄 ⠀ RECIPE - 1 kg button mushrooms - 1 garlic bulb - pinch of salt - oil ⠀ - 1 large onion - oil for frying - 3 tbsp vegan butter - 3 tbsp dried shiitake mushroom powder (optional) - 2 bay leaves - thyme - 2 tbsp flour - 1 cup white wine (or 1/3 cup whine wine vinegar) - 1 l vegetable stock - 1 cup soy milk - 1 tsp tarragon (optional) ⠀ To serve: - Pan-fried mushrooms - Pan-fried chickpeas - Fresh parsley - Olive oil ⠀ ❶ Cut mushrooms in half or quarters. Cut off the top of a garlic bulb, then place on a baking tray and roast at 230°C for about 30 minutes. Remove the garlic after about 20-25 minutes, so it doesn’t burn. ❷ In a pot sauté the onion until translucent. Add dried shiitake mushrooms, bay leaves and thyme and sauté until the onions start to brown. Whisk in the flour, cook for 1-2 minutes, then deglaze with white wine and fill up with stock.
