@theflakehomestead: Mini Pizzas🤝 Pizza Night If you’re already pulling everything out to make some big pizzas for family dinner, why not make some mini pizzas for the fridge?? Just make some extra dough (double it if you can!) and then roll out mini chunks to about tortilla size. Cook on a cast iron until just lightly browned. Top with whatever you want and freeze for 3 months! When you’re ready to reheat, throw it in the oven on broil or in the air fryer at 450 for like 10 mins— until golden on top (cook straight from frozen). Ditch the store bought freezer pizzas and make these! Game changer🫡 Here’s my pizza dough recipe: 2 1/4 cups warm water 1 1/2 tsp active dry yeast 1 1/2 tsp salt 5 cups all purpose flour 1 tsp olive oil Combine everything in the bowl of a stand mixer (or large bowl) and mix until combined. Knead for 10 mins until smooth and elastic. Pour out onto a lightly floured surface and separate into 8 pieces (it makes 8 large pizzas). Roll your pieces into a dough ball, and then place on a sheet tray and roll in the olive oil. Cover and let rise for 1-2 hours, until double. Roll out thin, top with whatever you want and cook on a hot pizza stone in the oven as high as it’ll go! For the mini pizzas, one piece of dough makes 3 minis. Roll out thin and cook on a skillet on medium/high heat. Assemble as normal. I hope this helps give you some quick meals for your freezer!
