it's a genetic defect in the chicken and can sometimes be caused by rapid growth. we raise our own meat birds and every now and then get one like thay.

It’s because the chickens are injected with too many growth hormones that their muscles can’t keep up the their growth rate. So the muscles tissue ends up stringy and ligaments are very weak.
