@annyfischer2: These super easy, light and fluffy, lemon ricotta pancakes are overflowing with blueberries. 1-1/2 cups all-purpose flour 3 Tbsp sugar 2 tsp baking powder 1/4 tsp salt * Add to a bowl and whisk together. In a medium bowl, add the following: 1 cup whole milk ricotta cheese 2/3 cup milk 1 Tbsp lemon zest 2 Tbsp lemon juice 1 tsp vanilla extract * Whisk the ingredients and egg yolks together. Add flour mixture and stir until just combined and moistened. Do not overmix. * In a clean bowl, beat egg whites until stiff peaks form. 2 large eggs, separate the yolks from egg whites * Gently fold egg whites into the batter, then fold in blueberries without overmixing. 1-1/3 cup blueberries, rinsed and dried (frozen can be used, thaw, drain and pat dry) * Let the batter rest for 5-10 minutes. * Melt butter in a skillet/griddle over medium heat. Add 1/3 cup batter to pan. Cook for a few minutes until bubbles appear around the edges and center. * Flip the pancakes over and cook for 1-2 minutes more.
