My Haitian Griot Recipe is top tier 😋 This griot recipe takes a whole lot of love, effort and time and it’s 1000% worth it!! If you’re short on time, you can still make this recipe in one day of course. Just let it sit in the acid then the marinate for as long as you can. If you have the time though, follow the instruction listed below 🥰 Ingredient List to Clean the Pork:  🌶️ 11lbs pork shoulder  🌶️ 6 limes  🌶️ 1/2 cup sour orange juice  🌶️ 1/4 cup lime and/or lemon juice 🌶️ 1/2 cup of white distilled vinegar 🌶️ 2 tablespoons of salt  To clean the pork, you want to thoroughly rub a piece of the lime on each piece of meat, all over. Once you’re done rubbing the lime on all the pieces, add the sour orange, lime and/or lemon juice, the white vinegar and salt.  Let sit for 4 hours but overnight preferably if possible in the fridge. The next day, rinse off the pork with hot boiling water. Make sure it’s enough water to cover all the piece of meat. Mix the meat around to make sure they are all touched by the boiling water. Let sit for 5 mins then pour out the water and rinse off meat once more with room temperature water before putting them in a bowl/ pot for seasoning. To Season the Meat, you’ll need:  🌶️ 1 cup of Haitian epis  🌶️ 1/2 cup of mojo marinade  🌶️ 2 chicken flavored bouillon Maggie cube 🌶️ 2 tablespoons and 1 teaspoon of seasoning salt 🌶️ A small bunch of Thyme & Parsley 🌶️ 1 scotch bonnet pepper Season the meat with the spices above and let sit overnight to marinate. The next day, to cook the meat, cover the pot with a lid and boil it until the meat is tender. No need to add any water or oil to the pot at first. The meat will produce its own liquid. Be sure to check the meat every now and then to see if it needs any additional water to boil. You also want to use a spoon to mix it up a bit, switch the meat position so they don’t stick to the pot and burn. Only add water more water if the meat still needs time to cook but the juice the meat produced is nearly/completely evaporated and you’re left with just the oil.  Make sure to let the meat cook, but don’t over cook it to the point where all the meat breaks down. Mine usually takes an 1 hour and 15-30 minutes to cook on high heat. If you can insert a fork in your meat easily, you can slice it open with a fork, it’s ready. Feel free to also try a small piece as a test.  To deep fry the pork, use a medium to large pot. Fill it with oil half way on high heat. Add your meat in, be sure to shake off as much of the meat juice off as possible. Water don’t mix well with oil 😅 Do not add too much of the meat at once to fry so the oil doesn’t over flow. Fry for 2-3 minutes or until meat is golden brown. DO NOT OVER FRY PLEASE! There’s nothing worse than griot you can’t chew because it’s over fried and hard 😫 For Garnish:  🌶️ 1/2 of each Bell peppers (all colors)  🌶️ 1 medium size onion  I like to strain the juice the pork cooked in and add it back to a small pot, add in the bell peppers and sliced onions.
