Japanese Style Chicken Curry This is without a doubt my favourite type of curry…the comfort is on another level…🔥 Thank you Japan 🇯🇵 I like to go heavy on the potatoes and carrots but you can add more chicken and less veg if you like. (700g chicken to 3 potatoes, 2 carrots maybe) Cauliflower would be a great sub for chicken also. What you need: * 500g Chicken thighs cut into chunks  * 2 large white onions diced or cut into chunks (your preference) * 5 large Potatoes peels and cut into large cubes (I used roosters) * 4-5 large Carrots  * 3-4 cloves of garlic minced * 1 tsp grated ginger * Black pepper Curry Sauce * 1000ml of Chicken or Veg Stock (I used two cubes) * 1-2 tablespoons of light soy sauce * 1tsp honey * 1 package (4 cubes) of Japanese Curry Roux Bocks (I used S&B Golden Curry Roux Blocks, bought online at Asiamarket.ie) mild perfect for kids but you can choose your own spice level. What to do: - Sauté onions in a little oil for 5 mins until golden - Add the ginger and garlic and cook for 1 min - Add the chicken and stir until white on the outside but not cooked! - Add the stock, soy sauce (start with 1 tablespoon) and honey - Add carrots and potatoes. The stock should be barely covering the ingredients..add more if it’s not. (You want lots of liquid) - Simmer for 10-15 mins on med low until the potatoes and carrots are fork tender (careful not to overcook) - Turn off heat. - Now take a couple of ladle of the stock from the pot and put it in a jug - Chop up the 4 curry roux blocks and put them in the jug to dissolve in the stock, it should get thick! - Now add it back into the pot and simmer uncovered for 5-10 mins until it’s nice and thick. - Add a tablespoon more of soy sauce if you need more seasoning. The curry blocks are fairly salty so you may not need it. - Serve with Rice rice (I’ve a foolproof way to cook really fluffy rice in my “Sides” highlight on my page) - Enjoy…this is divine. #curry #japaneserecipes #comfortfood #asianfood #japanesefood #dinner #DinnerIdeas #fyp #chicken #chickenrecipe
