Quick Creamy Vegetable and Bean soup This is such a great soup to use all your leftover veggies in the fridge. Any combo will do, this is what I had lying around. It’s incredibly tasty, easy, perfect for this weather & a winner with kids. Serves 6 * 1/2 head of cauliflower broken into bite size florets * 3 large carrots cut into cubes * 2 large potatoes cup into cubes (I used roosters) * 1 tin of cannellini beans drained and rinsed * 2 big handfuls of fresh Spinach chopped up * 1 tablespoon smoked paprika * 1 tablespoon garlic powder (fresh is great 2-3 cloves finely chopped, I just didn’t want to chop it) * A good shake of onion salt (optional) * Enough boiling water to nearly cover vegetables (but not quite covered) * 3 stock cubes crumbled up (veg or chicken) * 120g mature cheddar * 2 heaped tablespoons of sour cream * Salt and pepper to taste (use aromat if you have it instead) * Parsley to garnish (optional) What to do - Pop all veggies into a pot - Add smoked paprika, garlic powder and onion salt, stir it around - Add the boiling water until veg are nearly covered, add crumbled stock cubes & cook until veg are tender - Now add drained beans, cheese, sour cream, spinach and season to taste - Serve with a dollop of sour cream, parley and a crack of pepper. #fyp #soup #veggies #vegetarian #comfortfood #beans #creamy #EasyRecipe #healthyfood #healthy
