Seleeq (سليق) Easily one of my all time favorite dishes now.  Ingredients: - 2 tbsps ghee (or butter) - bay leaves - 4 cardamom pods - 1 stick of cinnamon - 1 chopped onion - 1 kg chicken (i used thighs but use whichever you prefer) - 5 cups of water - 2 cups of @canarybasmati  - 5 to 6 cups of milk - 2 heaping spoons of cream ( i used sterilized cream can) Daqoos: - 2 tomatoes - chili to taste - 1 clove of garlic - 1 peeled lemon - mint leaves - salt - drizzle of olive oil: - start by searing the chicken in a pot with the aromatics and onion till it gets a nice color then add the water and boil it for about 30 minutes or till super tender. - remove the chicken from the pot and grill it in the oven till nice and crispy. - strain the stock from all the aromatics and onion. - wash 2 cups of @canarybasmati then add it to the stock. Let it come to a boil then drop the heat to a simmer and let the rice absorb all the stock. ( 10-15 minutes) - once the rice is almost completely dry. Add the milk ( add 4 cups at start and should be at least 2 centimeters or half an index finger above the rice)  - keep stirring the rice with the milk on medium heat after seasoning the pot with salt & pepper. - it should take around 10 minutes till the rice start breaking up a tiny bit and soaking the milk. - if you see the mixture is thickening and the the rice is still not completely soft add another cup of milk. ( the grain rice consistency should be super soft and tender) - once its ready. It should be a tiny bit loose as it will thicken even more when cooled. Serve it on a flat plate topped with the chicken. Give it a drizzle of ghee on top and enjoy.
