@epicuriousexpeditions: Disability-Friendly Meatloaves Mini Meatloaf 3/4 cup milk 1 1/2 tsp dehydrated minced garlic 1 1/2 tsp of AP seasoning 1/4 tsp black pepper 3/4 sleeve ritz 1 egg 1 1/4 cup frozen bell pepper and onion, defrosted 1lb ground meat of choice Red sauce 1/2 cup ketchup 3 tbs brown sugar 1 tsp Worcestershire sauce Add milk, garlic, seasoned salt, pepper, and ritz crackers to a large bowl. Allow to sit for 5 minutes to make the crackers easier to break down. Add egg, bell peppers and onions, and meat. Mix until combined. Place in 3x5 mini loaf pans. Place mini loaf pans in the air fryer. Cook at 350 for 15 minutes.* ** While the meatloaves cook, make red sauce by mixing ketchup, brown sugar, and Worcestershire sauce. Carefully remove meatloaves from air fryer, top with the red sauce. Return to the oven for an additional 10 minutes at 350 degrees. Notes: *If an oven can be used safely, they can be placed into a preheated 350 degree oven instead of an air fryer. **If you’re making 1 whole meatloaf instead of mini meatloaves, bake for 25 minutes, add sauce, bake for an additional 20 minutes. Time may vary based on the width of the pan you use. #Recipe #disability #wheelchair #autism #downsyndrome

I never considered how opening a can, opening a sauce bottle, cutting some veggies is a huge struggle for so many people its making me realise how unaccessible everything in the supermarkets is

Seeing stuff like this makes me cry because it feels like there’s so little disability representation, activism, or anything like that. I’m disabled and while my husband does the cooking so I don’t

Thank you so much! I am renovating my home to prepare for when I’m older and less able to putter about. Adding this to my old little lady resources!

An air fryer is basically a counter top convection oven and once people realize that, it opens up a whole world of possible foods they don't associated with "fryer", like this meatloaf. 🥰

I love this, my son is autistic and is terrified of the stove and knives. But he mixes everything for me, and uses the air fryer! Thank you! 🩷

Thank you for this. My biggest issue is hand mobility and usually need someone to help me with some things (opening anything, stirring, etc). I love the idea of making changes to be independent.
