too much oil pooling in the bottom makes them look concave, traditionally beeswax mixed with oil to get the shiny coating so maybe try that!

The whites are from too much oil brushed into the pan. I used to make these every day at Dominique Ansel bakery in NYC 🥰

maybe the white bottoms are from oil collecting at the bottom when you brush it on? I think you can aerosolize your own oil at home too!

You can buy a food grade spray bottle from Amazon and pour oil in it and it should work better than brushing
