No more banana bread! 250g butter 3 eggs 200g dark brown sugar 100g plain flour 50g cornflour 200g condensed milk 3 brown bananas ½ tsp salt ½ tsp baking powder 200g cream cheese 100g icing sugar 1 tsp cinnamon Preheat the oven to 165C Butter, flour and line with baking paper 28cm square tin. Melt the butter in a sauce pan and cook for 15 mins until it has browned and smells nutty. Save 100g in a small bowl in the fridge for later. Mash up the bananas with the condensed milk. Use a hand blender to make this smooth if you dont want chunks in your bars. Add in the melted brown butter, eggs, sugar, plain flour, corn flour salt and baking powder. Mix well until smooth. Pour into the prepared tin and bake for 30 minutes, a toothpick should come out sticky. For best results allow to cool for 12 hours unrefrigerated. Try a piece straight out of the oven and watch the texture transform over time. For the frosting whip up the saved 100g of brown butter with the cream cheese and icing sugar. Cut the banana bars into squares and spread over the frosting, sprinkle over a pinch of cinnamon and enjoy.
