You can use apples or pears instead of nectarines too. super delicious and look if you muck it up just do a scramble Thanks for the help @dr_double_oh this makes 2 serves macros per serve carbs 23.4g fats 8.8g protein 24g Ingredients: Eggs (3) Egg whites (200g) Fish sauce (1 tsp) Ginger (thumb-sized, chopped) Garlic (3-4 cloves, chopped) Chili (1, diced) Vegetable oil (1 tsp) Salt and pepper Instructions: Whisk eggs, egg whites, and fish sauce. Heat oil in a pan. Sauté ginger, garlic, and chili for 1-2 minutes. Pour in eggs. Cook 30 seconds, gently scramble until half set. Season with salt and pepper. Let the bottom set for 1 minute. Lift edges, roll, and cook 1-2 minutes until fully set. Serve with salad. Salad Ingredients: Handful of mint leaves Handful of Vietnamese mint leaves Small bunch of coriander, roughly chopped Sprig of dill leaves (optional) 5 cos lettuce leaves, roughly torn 1 shallot, finely chopped 1 nectarine, finely sliced Instructions: Combine all the herbs, lettuce, shallot, and nectarine in a large salad bowl.
