In today's harrowing times, we all need to hug our kids just a little tighter and maybe bake a batch of their favorite thing. Just because. Almond-Browned Butter Madeleines Yield: About 16-18 · 9 tablespoons unsalted butter · 2 large eggs · 2/3 cup sugar · 1 teaspoon vanilla extract · ½ teaspoon almond extract · 1/8 teaspoon salt · ¾ cup all-purpose flour, plus more for dusting pans · ¼ almond flour · Powdered sugar Directions: 1. Preheat oven to 375°F. Generously grease and flour madeleine pan; shake off excess flour. Place prepared pan in the freezer until ready for use. 2. Melt butter over medium heat in a small saucepan, swirling occasionally. Bring to a low simmer and cooking only until the milk solids start to brown– watch carefully and do NOT burn! Set aside to cool slightly. 3. Using electric mixer, beat eggs and sugar in large bowl for 3-5 minutes, until mixture thickens and is pale yellow in color. Beat in vanilla and almond extracts. Add flour, almond flour and salt; beat just until blended. Gradually add melted butter; fold into batter until completely incorporated. 4. Remove pan from freezer. Spoon 1-2 tablespoons batter into each indentation in pan. Bake until puffed and golden, about 12 minutes. Cool 5 minutes. Gently remove from pan. Repeat with remaining batter. (Batter can be made 1 day ahead – store in refrigerator.) 5. Dust cookies with powdered sugar before serving.
