High-protein mediterranean chicken bowl 😋🍋 Because healthy doesn’t have to be boring! This bowl is packed with protein, fresh ingredients, and incredible flavor. So good and so easy to make! Ingredients for two portions: Chicken: Chicken breasts – 2 small Greek yogurt – 3 tbsp Olive oil – 1 tbsp Paprika – 1 tsp Dried oregano – 1 tsp Juice of 1/2 lemon Salt – To taste Black pepper – To taste Rice – 1 cup uncooked Lemon juice – 1 tbsp Fresh dill – 2 tbsp, chopped Roasted vegetables: Zucchini – 1/2 medium Bell peppers – 3 pcs Olive oil – 1 tbsp Salt and black pepper – to taste Tzatziki: Greek yogurt – 1/2 cup Cucumber – 1/3, grated and squeezed dry Garlic – 1 clove Lemon juice  – 1 tbsp Fresh dill – 1 tbsp For Serving: Cherry tomatoes – 1 cup, halved Red onion – 1/2 small, thinly sliced Kalamata olives or black olives – 1/3 cup Feta cheese – a small handful Lemon wedges – for serving Instructions: 1. In a bowl, combine the chicken breasts, Greek yogurt, olive oil, paprika, oregano, lemon juice, salt, and pepper. Marinate for at least 20–30 minutes. 2. Cook the rice according to package instructions. Once cooked, mix with lemon juice and fresh dill. 3. Slice the zucchini and bell peppers. Toss with olive oil, salt, and pepper, then cook in an air fryer at 200°C (400°F) for 12–15 minutes, or roast in the oven until tender and lightly caramelized. 4. Make the tzatziki by combining Greek yogurt, grated cucumber, garlic, lemon juice, dill, and salt. 5. Cook the chicken until golden brown and cooked through. Let it rest for a few minutes, then slice. 6. Assemble the bowls with the lemon-dill rice, roasted vegetables, sliced chicken, cherry tomatoes, red onion, olives, and a generous spoonful of tzatziki. 7.
