Cuban Dip Ingredients: 1 pork tenderloin, sliced into thin pieces, almost shaved 1 white onion, small diced 1/4 lb of deli ham, sliced up 4 cloves garlic, diced up 1/2 can smoked tomatoes, diced 2 tbsp chipotle sauce 2 tbsp mustard 8 dill pickles, sliced thin 1/2 bunch fresh cilanto, chopped 1 c panko crumbs 2 1/2 c gruyere cheese, grated 1/2 stick salted butter (divided) 2 tbsp olive oil Preheat oven to 375 degrees. Heat a cast iron skillet. Add 1/2 of the butter (1/4 stick) until melted. While that’s melting slice up the deli ham into circles and then cut in half until loose and shingly. Add onion to the butter, saute down and then add garlic until you can smell it and they have nice color on them. Add pork. Keep moving it around until you have nice color on all sides of the pork. Lower heat a little bit and add the ham, tomatoes, chipotle and mustard, mixing until everything is combined well. Add 1/2 the cheese and 1/2 the cilantro. Season with salt & pepper. Make sure everything is mixed well. Top with remaining cheese. In a bowl, mix panko and the other half of the butter (melted) and stir to combine. Add to cast iron on top of the cheese. Layer pickles on top, pushing them into the top of the crust. Add some black pepper followed by a drizzle of olive oil on top. Bake for 25 minutes.
