@morganpetersonn: our weekly at-home date night — filet, warm potato salad & air fried Brussels sprouts. SO GOOD. — Warm Potato salad recipe 🥔 (not sure where this recipe came from, just the one my mom used growing up!) - About 5 cups cubed red potatoes - 1 large white onion cut into strips - 6-8 bacon sliced (I use center cut) - 2 tsp salt - 1 tsp pepper - 1 tsp paprika - 1/4 tsp dried thyme - 1/4 tsp dried crushed rosemary - 1/8 tsp celery seeds - 4 tbsp mayonnaise - 1.5 tbsp dijon mustard - 2 tsp Worcestershire sauce Preheat oven to 400F. Cook bacon in a skillet until crispy & then remove. Keep bacon drippings in the pan and add potatoes, onions, salt, pepper, paprika, thyme, crushed rosemary, and celery seeds. Mix until potatoes and onions are coated in seasonings. Place on a pan and bake for 30 minutes or until potatoes are done. While they’re cooking, combine mayo, dijon mustard, and worcestershire and set aside. Also crumble bacon! Once potatoes are done, place in a large bowl and mix in the mayo mixture and bacon. — For the Brussels sprouts, I just toss with olive oil, salt, pepper, garlic powder & paprika.
