Mix and squeeze everything together for 2–3 minutes until the chicken absorbs most of the liquid. 3 Marinate for 10 minutes. 4 In a bowl, mix orange juice, sugar, honey, soy sauce, rice vinegar, tomato sauce, and corn starch. Set aside. 5 Grate some ginger and garlic, and zest a little orange peel. Set aside. 6 Add corn starch and potato starch to the chicken. Mix well. 7 Add 3 tbsp water and a small drizzle of olive oil. Mix until the batter evenly coats the chicken. 8 Heat the oil to 180°C and fry the chicken for about 3 minutes.
