Anyone who says it’s undercooked has never touched a smoker, I do my thighs/ whole chickens same way. My friends and family all rate 10/10 every time. I like using Caribbean jerk or curry powder too

Can assure everyone freaking out in the comments, it is indeed cooked. I had smoked chicken for the first time fairly recently and was deeply concerned but it tasted alright and was definitely cooked
