Lebanese awerma Ingredients: - 1 kg lamb fat ( i used NZ lamb fat as it is the least gamey for me) - 1 kg lamb cut into tiny pieces - 1 onion - 1 tbsp cumin seeds ( optional) - salt & pepper - start by adding the lamb fat to a pot with the onion and cumin seeds. - let them heat up on medium heat while stirring occasionally for 10 minutes. - drop the heat to low and let it render for one hour. - strain the fat then add the lamb pieces to it. Cook it on medium low heat for an hour. Once it’s cooked season with salt and pepper. - let it cook for 5 minutes then place it in jars. Let the jars get to room temperature in order for the fat to solidify. - seal it and store it in a cool place or in the fridge up to a year. - use it as ghee or butter replacement. Perfect for frying eggs. Steaks or even in stocks and stir fries.
