Should I be using very strong or strong white flour for my starter??

Alyson Tam :
So would your 1:5:5 mean 10g starter, 50g flour and water? Everybody uses different grams and it’s so confusing.

I literally have watched like 5 videos on the ratio thing and still don’t understand. I’m so overwhelmed with the sourdough thing😭

So my starter smells good but doesn’t rise within 4-6 hours takes at least 12, would you do a big feed?

Can I ask why this keeps happening to me? When I feed my starter at a 1:2:2 ratio, it doesn’t rise and stays very fluid, even though it’s usually strong and grows well with a 1:1:1 ratio. 🥺

Ydna :
So 1:5:5 would be: 5g starter, 25water, 25 flour?

You explained all this so great!! I actually prefer to use unfed starter for my dough. I get better rise. Because why feed what is already full? So the feed is my dough. Just my preferred way.

I'm a bit confused when you said you do a warm 1:1:1 when it's ready, do you feed it at peak on the morning? I'm a little confused

I can't get the bulk fermentation down. My timing is still so off. I've done 2 hours after my stretch and folds. And then 3 hours after my stretch and folds. My dough just doesn't look right. 🥺

I do a 1:2:2 or a 1:3:3. Is that ok? I only here of 1:1:1 or 1:5:5 or 1:10:10.

Mine got a very alcohol smell when I was feeding it a 1:1:1 daily because I didn't know any of this. I've been feeding it 1:3:3 and it's still slightly smelly. I definitely need to increase the ratio.
