Salmon Pie!! I don’t know about you but I love anything with mashed potatoes, especially at this time of year! Which is why I was not surprised that I was absolutely blown away by this one. The delicious combination of Ontario cream, milk and butter paired with fresh salmon and herbs really makes for a winning dish. It’s a must try!!  Recipe: 500ml Ontario Milk 500ml Ontario Cream 1/2 cup Ontario Butter 454g Salmon  1/2 Onion - diced  2 cloves Garlic - sliced  1 stalk Celery - sliced  1 large carrot - diced  1 bulb Fennel - diced  1/2 bunch Dill - chopped  1 bunch Chives - chopped  1 Lemon - zest and juice  1 tablespoon Cajun seasoning  2 tablespoons All purpose flour  1 tablespoon salt 1/2 tablespoon black pepper Method: In a large pot on medium heat, sweat off all your diced vegetables in 1/4 cup of butter. Once cooked down (3-4 minutes) add your Cajun spice mix well and allow to cook for another 2-3 minutes. Add flour max and cook for 2 minutes while stirring constantly. Add your milk and cream and bring to a boil. Reduce the heat and allow to simmer for 10 minutes while stirring occasionally or until it starts to thicken. Next, add your cubed salmon, peas, dill and chives as well as salt and pepper. Stir this and allow to simmer on a low heat for 10 minutes. At this point your filling should have thickened up considerably. Remove from heat and allow to cool. MASHED POTATOES 6 Yukon gold potatoes - peeled and sliced in half 3 egg yolks 1/4 cup butter 2 teaspoons Salt Add potatoes and salt to a medium-sized sauce pot and bring to a boil. Reduce heat and allow to simmer until the potatoes are tender. Remove from heat, strain and then rice or mash your potatoes into a large bowl. While hot, add butter and egg yolk and mix really well. Season with salt to taste. Assembly/cooking Preheat oven to 400F. In a large baking dish, add your filling to the bottom. Then using a piping bag with a large star tip I add my mashed potatoes on top. This step is optional as it doesn’t add any extra flavour. Once covered, bake in the oven for 20-25 minutes.
