Creamy Tuscan Chicken Pasta 🍝 Ingredients 1 chicken breast (cut in half) ½ tbsp paprika ½ tbsp garlic powder ½ tbsp onion powder 1 tsp salt 1 tsp black pepper Dash of olive oil 3 cups cooked pasta 2 tbsp olive oil 2 tbsp butter 1 small onion, diced 3 garlic cloves, minced 1½ cups cherry tomatoes, halved 1 tbsp tomato paste ⅓ cup sun-dried tomatoes 1 tbsp Italian seasoning 1 tbsp paprika Salt and pepper to taste ¾ cup heavy cream ½ cup pasta water 2 cups spinach (or less if preferred) 1 cup grated Parmesan cheese Instructions: - Season chicken with paprika, garlic powder, onion powder, salt, and black pepper. - Heat 2 tbsp olive oil in a pan over medium heat. Add the chicken and cook on both sides until golden brown and the internal temperature reaches 165°F. Remove from the pan and set aside. - In the same pan, add butter and diced onion. Add tomato paste and sun-dried tomatoes, stirring for another minute. - Add Italian seasoning, paprika, salt, and pepper. Cook for 1 minute, then pour in the heavy cream and pasta water. Stir well and let it simmer for 2 minutes. - Add spinach and Parmesan cheese. Stir until the cheese is melted and the sauce is creamy. - Slice the cooked chicken and return it to the pan.
