MEAL PREPPED BREAKFAST BURRITOS 🥓🍳 These freezer-friendly breakfast burritos are the perfectly delicious & protein packed breakfast to start your day with that you can prep ahead to keep on hand for busy weeks! INGREDIENTS (makes 12 burritos): * 12 large tortillas * 1 lb ground breakfast sausage * 10oz bacon * 28oz tater tots or hash browns * 2 tbsp olive oil * 15 eggs * 1 tsp salt * 1 tsp pepper * 1 yellow onion, finely diced * 3 bell peppers, diced * 1.5 cups shredded cheddar cheese DIRECTIONS: 1. Prepare bacon - line a large baking sheet with foil, add bacon and bake at 400 for 12-15 mins. Place on a plate line with paper towel to remove excess grease, then dice into bite sized pieces and set aside 2. Prepare potatoes according to packaging, then set aside 3. In a large pan over medium heat, add ground breakfast sausage and cook for 6-8 minutes until browned. Remove from the pan and set aside 4. To the same pan, add onions and bell peppers and saute for 4-6 minutes until fork tender. Remove from the pan and set aside 5. Whisk eggs in a large bowl, add 1 tbsp olive oil to the pan, then add eggs, salt and pepper and scramble eggs until cooked through. Remove from the pan and set aside 6. Assemble breakfast burritos - add shredded cheese to the middle of a tortilla, followed by potatoes, eggs, bacon, breakfast sausage, onions & peppers and additional layer of cheese. Tightly wrap the burrito and set aside 7. OPTIONAL: Add 1 tbsp of olive oil to a large pan and cook tortillas for about 3 minutes per side until golden brown 8.
