Air frying tofu is personally my FAVORITE way to make it so it’s extra crispy! #ad  If I could only recommend one piece of cooking equipment to make eating healthier easier it will ALWAYS be an air fryer! My current favorite is the new @Gourmia 8 Quart Air Fryer, it’s so affordable and fits so much food, it’s perfect for meal prep and is available at Costco! Air fryer crispy tofu spring rolls Ingredients 1 block extra firm tofu, pressed of excess water  3 tbsp soy sauce 1 tsp garlic powder 1 tsp onion powder 1 European cucumber  2 large carrots 1 package of seaweed snacks Sushi rice - I used microwave sticky rice, but you can make your own rice too. 12 rice paper sheets For the peanut sauce 1/3 cup powdered peanut butter 3 tbsp coconut aminos 1 tbsp maple syrup 2 tsp lime juice 1-2 tbsp of water to thin (add more if needed) Instructions: Press tofu by wrapping it in a towel and placing something heavy on top, I use books, let sit for an hour. Then slice into 6 squares. Add tofu to a bowl with soy sauce, garlic and onion powder. Mix.  Preheat air fryer to 400F and spray basket with nonstick cooking spray. Add tofu and cook for 15 min, flipping halfway through. While tofu cooks slice cucumber and carrots into thin pieces. Assemble spring rolls: fill a bowl with hot water. Place rice paper wrap in the water then add to a cutting board. Add rice, tofu, cucumber, carrot, and seaweed. Fold bottom of rice paper into the center then fold opposite ends in and roll. Place into a second piece of rice paper and repeat (double wrapping holds everything together).  Spray spring rolls with nonstick cooking spray and air fryer at 400F for 10 minutes or until crispy.  Whisk together all peanut sauce ingredients until smooth, adding more water if too thick. Dip spring rolls in peanut sauce and enjoy! #airfryer #airfryerrecipes #tofu
