Turkey Koftas with Couscous and Tzatziki  These are great on the BBQ for an alternative healthier dinner if you are tired of eating burgers or hot dogs. Great for an everyday dinner too! Serve 4 Koftas * 8 skewers (soak them thoroughly if bbqing) * 500g Turkey mince * 4 cloves garlic finely minced * 60g breadcrumbs  * 1 punnet of mushrooms finely chopped * 2 Tbsp smoked paprika,  * 2 Tbsp cumin * 1 tablespoon garlic powder (optional) * 3 tsp aromat or plenty of salt and pepper  Couscous * 240g dry, plain couscous * 2 carrots, pealed and grated  * A big handful of Spinach * 2 Spring onions * 20-40g of fresh coriander  * 60-100g Walnuts * 6 tablespoon of Extra virgin olive oil * 1 stock cube in 400ml water * Juice of 1/2 lemon * 1-2 tsp agave or honey (to your taste) * Salt and pepper Tzatziki  * 150g Authentic Greek Yogurt * 1/2 cucumber grated and all liquid squeezed out * Juice of 1/4-1/2 a lemon  * 1  Tbsp olive oil * 1 tsp agave / honey * 1 tsp garlic powder or freshly minced garlic 
Soak the skewers in cold water until step 2 (this prevents burning whilst cooking if you are bbqing) In a bowl put all kofta ingredients and
Mix well with clean hands. 
Divide the mixture into equal portions and shape into hotdog shapes. It makes 8. 
Carefully pierce the skewer through each hotdog, then squeeze the meat tightly around the skewers (cover 2/3rds of skewer)
 Dry fry mixed nuts with a pinch of salt until they start to brown
 Cook Koftas on the pan with a drizzle of oil or BBQ (brush with oil if doing so)
 Add couscous, carrots and spinach to a large bowl 400ml of boiled water with 1 stock cube and cover
Set aside for 10 min then fluff with a fork
Once fluffed, add the juice of 1/2 lemon with the spring onions, coriander, 6 tbsp of olive oil, agave, chopped toasted walnuts and salt and pepper to your taste

Combine all Tzatziki ingredients and mix 
Serve the koftas over the couscous with the Tzatziki drizzled over, spring onion , coriander and sliced chilli if you like a bit of spice.
