Enjoy 😋Chris x PIZZA CHICKEN PARMESAN | Serves 4 INGREDIENTS ➡️SAUCE: 1 tbsp Olive Oil 1/2 small White Onion, grated 1-2 cloves of Garlic, finely grated 1 tbsp Tomato Puree (tomato paste in US) 1x 400g/14oz can of Plum Tomatoes, roughly chopped in the can with a knife 1/2 tsp EACH: Sugar, Dried Oregano, Dried Basil 1/4 tsp EACH: Salt, or to taste Pinch of pepper + chilli flakes (optional) ➡️PARMA: 4x 5oz/150g Chicken Breasts 50g / 1/3 cup Flour 2 Eggs, beaten 75g / 1 1/4 cups Panko Breadcrumbs 50g / 2/3 cup freshly grated Parmesan 1 tsp EACH: Salt, Garlic Powder, Oregano 1/2 tsp Pepper 240ml / 1 cup Veg Oil 200g/7oz freshly grated Mozzarella Thinly sliced peperami, olives, pepper METHOD 1️⃣Heat 1 tbsp oil in a pot over low-medium heat. Fry onion & garlic until they just begin to catch colour, then fry tomato puree for couple of mins. Pour in tomatoes (swill out the can with splash of water) and stir in remaining ’Sauce’ ingredients. Bring to simmer then immediately reduce heat to low & simmer with lid slanted on top for 30-40mins, or until thick & no longer watery.
2️⃣Pound chicken breasts to even thickness (don’t pound so thin they start breaking apart). Combine 1 tsp garlic powder, salt, oregano & 1/2 tsp pepper in small pot. 3️⃣One by one dredge the chicken through bowl of flour + half the pot of seasoning, then bowl of beaten egg, then bowl of Panko + Parmesan + rest of seasoning. 4️⃣Heat 1 cup oil in large heavy-based pan over medium heat. Oil should be around 350F/180C - drop a few crumbs in to test if they rapidly bubble. Carefully place chicken in 2 breasts at a time & fry for 3-5mins on each side, or until golden on the outside/white through the centre. Place on a wire rack above a tray & repeat. 5️⃣Top the chicken with pizza sauce, then mozzarella, followed with peperami, pepper and olives. Place under the grill until the cheese is golden & bubbly.
