Change your blade regularly! 2️⃣ Chill Your Dough – Freeze your dough for 30-60 min so that the dough is firmer and easier to score 3️⃣ Light vs. Deep Cuts • Shallow cuts to create fine, intricate decorative patterns. • Deep cuts for better oven spring and controlled expansion (e.g., the main ear). 4️⃣ Flour for Contrast – Lightly dust your dough with rice flour before scoring to make designs pop after baking. 5️⃣ Angle Matters – For a bold ear, hold your blade at a 30–45° angle and make a confident, long slash.
