Honey Start by roasting the peanuts for 5 minutes in a 400°F oven, this helps release the natural oils. Next in a food processor or blender add the peanuts and salt and blend for five minutes. Be sure to scrape the sides to get an even smooth peanut butter. After 3-4 minutes of blending the mixture should be smoother. Add honey or any kind of sweetener you like and bleand for another minute till fully incorporated and smooth. Store in a jar or airtight container in the fridge for several weeks. (For a crunchy pb add honey after 2 minutes of blending and blend for 1 more minute). 😁

It’s super easy and great for weekly meal prep too 😆 Ingredients 2 heads of broccoli 1 large courgette 2 carrots 1 box of mushrooms 1 block of extra firm tofu 1 cup raw millet Sauce: 1/3 cup soy sauce 3 tbsp brown sugar (can use maple syrup) 1/4 cup mirin or rice vinegar 1 thumb of ginger (I used frozen) 6 cloves of garlic (I used frozen) 1.5 cups water Garnish with sesame seeds 1. Add all your chopped veggies to a HUGE baking dish, add in chopped tofu and sprinkle over the raw millet. 2. Heat your sauce ingredients until boiling and pour it over the top of your veggie/millet medley. Mix to combine. 3. Cover with foil and bake for 45mins at 180 Celsius or until the millet is fluffy and the veggies are cooked. Enjoy!
