Doing a Sourdough Whisperer #Recipe using 50 grams starter 350 water 500 grams bread flour 7 grams salt, mixed in #kitchenaid 2 min low then waited 30 min. Then 4 sets stretch folds 30 min apart. Proofed on bread proofing mat at 75 degrees for 8 hours. It looks under fermented. Try leaving it out on the counter a lot longer before shaping it and putting it in the fridge for cold proofing. This is even more critical if you live somewhere cold.

I am still a beginner! Currently making my 4th and 5th loaf. But I’ve looked at a ton of recipes and 100-150 grams of active starter seems to be the norm for one loaf.
